Tasty & Healthy Salad Dressings
Most commercial salad dressings are full of many unhealthy ingredients. If you are going to eat a healthy salad, make sure the dressing is too. Here are some tasty and healthy salad dressings. They are also easy to make.
- 2/3 cup olive oil
- 1 room temperature egg
- 2 Tbsp apple cider vinegar
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tbsp dried herbs or handful chopped fresh herbs (try dill, cilantro or parsley)
- 2 Tbsp full fat canned coconut milk or coconut cream
Place the egg, vinegar, spices and herbs (everything but the coconut milk) in the food processor. Pulse a few times.
Next, measure out the oil and very slowly pour the oil into the top of food processor (running on low speed) or into however you are mixing the dressing. Once all the oil has been added in, add the coconut milk and pulse a few more times.
Combine olive oil, mustard, vinegar, salt, and pepper in a jar or container with a tight-fitting lid. Cover tightly with the lid and shake vigorously until thickened, about 2 minutes. Taste dressing and adjust flavor with salt and pepper.
- 1 cup fresh raspberries
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- Fresh ground red pepper
Instructions: Food process or blend all ingredients until smooth.
Creamy Caesar Dressing
- 2/3 cup olive oil
- 1 egg
- 2 Tbsp lemon juice
- 2 wild anchovy filets
- 2 cloves of garlic, minced
- 1/2 tsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 2 Tbsp coconut milk
Instructions: Add minced garlic and anchovy fillets to the food processor and pulverize. Add all other ingredients besides oil and coconut milk and then pulse to combine. Slowly drizzle oil in top holes. Add coconut milk in last, pulse to combine.
